The taste of Fall, Salmon
nicknamed Akiaji, “the taste of Fall” representative delicacy in Hokkaido.

We come to hear the coming back of salmon to many rivers in Hokkaido in September, when we find many of them lined up in markets or stores.

All through the year, we find salmon sold in the stores. Especially in fall, we call the salmon of the season “Akiaji” (taste of fall) as they are particularly tasty, one of the typical delicacy in fall. Many of us buy the whole salmon to eat every part depending on their suitable recipes, grill, fry, deep-fry…, besides, we have our popular dish from Hokkaido, named “Ishikari-nabe”, a hot pot cooked at the table with many kinds of vegetables or other ingredients in miso soup. Another popular salmon menu is salmon roe, fresh roe soaked in soy-sauce and sake for a while. This is called “Ikura” usually put on the steamed rice, called “Ikura-Don”. Many people of Hokkaido make this delicacy in fall at home soon after fresh salmon roe is available in stores.
