Vergine Baccano is a bread shop and café in the forests of Jozankei, which bakes bread in a stone oven using Hokkaido wheat. The freshly-baked bread, made from Hokkaido wheat, is arranged at the front of the shop as it opens. The shop’s owner Tatsuya Honma explains: “I opened the shop because I was impressed by how delicious the bread was when I was studying cooking in France”. Different types of Hokkaido wheat are used depending on the type, and in summer, plenty of locally-grown vegetables are used.
